Ingredients
- 2 cups whole milk
- 3 tablespoons sugar
- 1/2 vanilla pod or 2 teaspoons vanilla extract
- 1 small cinnamon stick
- 3 cloves
- Pinch of freshly grated nutmeg
- 3 egg yolks
- 1/2 cup brandy
Instructions
- In a heavy-bottomed saucepan, combine the milk, sugar, vanilla pod, cinnamon, cloves, and nutmeg. Bring to a near boil over medium heat.
- Simmer the mixture for 20 minutes, stirring occasionally, and then set it aside to cool slightly.
- In a large bowl, beat the egg yolks until pale and creamy.
- Slowly pour the slightly cooled milk mixture into the bowl of egg yolks, whisking continuously.
- Return the combined mixture to the saucepan and simmer on medium heat, stirring constantly until thickened.
- Remove from heat and let it cool for 5 minutes, then stir in the brandy and vanilla extract (if not using a pod).
- Transfer the Rompope to sterilized bottles or jars and let it cool completely before refrigerating for at least a week for the flavors to develop.
- Serve cold or warm, topped with a sprinkling of cinnamon and icing sugar if desired.
