Ingredients

  • 2 cups whole milk
  • 3 tablespoons sugar
  • 1/2 vanilla pod or 2 teaspoons vanilla extract
  • 1 small cinnamon stick
  • 3 cloves
  • Pinch of freshly grated nutmeg
  • 3 egg yolks
  • 1/2 cup brandy

Instructions

  1. In a heavy-bottomed saucepan, combine the milk, sugar, vanilla pod, cinnamon, cloves, and nutmeg. Bring to a near boil over medium heat.
  2. Simmer the mixture for 20 minutes, stirring occasionally, and then set it aside to cool slightly.
  3. In a large bowl, beat the egg yolks until pale and creamy.
  4. Slowly pour the slightly cooled milk mixture into the bowl of egg yolks, whisking continuously.
  5. Return the combined mixture to the saucepan and simmer on medium heat, stirring constantly until thickened.
  6. Remove from heat and let it cool for 5 minutes, then stir in the brandy and vanilla extract (if not using a pod).
  7. Transfer the Rompope to sterilized bottles or jars and let it cool completely before refrigerating for at least a week for the flavors to develop.
  8. Serve cold or warm, topped with a sprinkling of cinnamon and icing sugar if desired.
