Ingredients

  • 1 large egg
  • 3 tablespoons sugar
  • Pinch of fine sea salt
  • 3/5 cup whole milk
  • 1/5 cup heavy whipping cream
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 2 teaspoons pure vanilla extract

Instructions

  1. In a large mixing bowl, whisk together the egg, sugar, and sea salt until well combined. Set aside.
  2. In a large saucepan, combine the whole milk, cream, cinnamon, and nutmeg. Heat over medium-low heat, whisking often, until it begins to steam, about 10 to 15 minutes.
  3. Add 3 tablespoons of the warm milk mixture to the egg mixture and whisk well. Add in another 3 tablespoons of the milk mixture and whisk again. Repeat twice more so you've added a total of 1/5 cup of the milk mixture to the egg mixture.
  4. Pour the egg mixture into the saucepan with the rest of the milk mixture and continue to heat and whisk almost constantly until the mixture begins to thicken and reaches 160°F, about 15 minutes.
  5. Remove from heat and whisk in the vanilla extract. Strain the mixture into a glass or other container with a cover. Allow it to chill completely in the fridge.
  6. Stir well before serving and top with a sprinkle of cinnamon if desired.
