Ingredients

  • 1 cup granulated sugar
  • 1 cup water
  • 1 cup dried marigold flowers
  • Pinch of sea salt
  • 3-4 dried marigold flowers
  • 2 limes
  • 1/4 cup mezcal
  • 2 tablespoons marigold syrup (recipe below)

Instructions

  1. In a small saucepan, combine the sugar and water. Heat over medium-high heat, stirring until the sugar is dissolved. Once boiling, remove from heat, stir in the marigold flowers, cover, and let steep for at least 15 minutes, up to 2 hours to make the marigold syrup.
  2. In a shallow dish, mix about 1/4 cup of salt with crumbled marigold flowers. Rub the salt and flowers together.
  3. Cut one lime in half. Take one half and cut it into thick slices. Rub one of the lime slices around the edge of a rocks glass. Dip the rim of the glass into the marigold salt and fill the glass with ice.
  4. Fill a shaker with ice. Squeeze the remaining lime wedges into the shaker, add mezcal, and syrup. Cover and shake vigorously.
  5. Strain the mixture into the prepared glass and garnish with a crumbled marigold flower and a lime wedge.
