Ingredients

  • 1/2 cup sugar
  • 1/2 cup water
  • 2 cups freshly picked lilacs
  • Juice from 4 large lemons
  • 1/2 cup fresh blackberries
  • 2 cups filtered water
  • 1.50-2 oz Gin
  • Ice

Instructions

  1. In a small saucepan, bring 1/2 cup of water and 1/2 cup of sugar to a low boil to make lilac simple syrup.
  2. Simmer the syrup until it’s reduced by half, then remove from heat and stir in the lilac florets. Let the mixture sit for one hour to cool and infuse with lilac flavor.
  3. Strain the syrup through a fine-mesh sieve into a small bowl, reserving one ounce for the blackberry mixture.
  4. Add the remaining lilac syrup to a large pitcher.
  5. In a cocktail shaker or large glass, muddle the blackberries with one ounce of simple syrup. Strain the mixture through a fine-mesh sieve into a small bowl.
  6. Add the lemon juice, water, and gin to the pitcher, and stir to combine.
  7. Adjust the taste as needed by adding more lemon juice or water.
  8. To serve, fill a large Collins glass with ice and pour 0.5 ounce of the blackberry mixture over the ice. Fill the glass with the lemonade mixture and garnish with a lemon slice and fresh lilacs. Enjoy!
