Ingredients

  • 2 oz. gin (Sipsmith VJOP London Dry Gin or gin of choice)
  • 1/2 oz. Edith Grey simple syrup (recipe below)
  • 3/4 oz. lemon juice
  • 1 lavender-infused egg white
  • Schramsberg Blanc de Blanc
  • Garnish with agave syrup stripe and Edith Grey tea
  • 1 part Big Heart Tea Co. Edith Grey hot tea
  • 1 part white sugar
  • 1 egg
  • Dried lavender buds

Instructions

  1. To prepare the infused egg white, place a whole egg (unbroken, in the shell) in a sealed container on a thick bed of lavender buds and refrigerate for two to three days.
  2. For the Edith Grey simple syrup, brew the Big Heart Tea Co. Edith Grey according to the package instructions, strain the tea, then combine it with an equal amount of sugar while hot. Stir until clear and let it cool.
  3. Once the egg and syrup are ready, combine all ingredients except the sparkling wine in a shaker.
  4. Dry shake the ingredients, then add ice and shake for a minimum of thirty seconds.
  5. Strain the mixture into a glass and top it with the sparkling wine. Garnish with a stripe of agave syrup and a hint of Edith Grey tea on the condensation along the outside of the glass.
