- 2 tbsp golden monk fruit sweetener
- 1/4 cup heavy cream
- 1/3 cup unsweetened almond milk or coconut milk
- 1/8 tsp ground nutmeg
- pinch of sea salt
- 1/2 tsp pure vanilla extract
- (1 oz) rum, brandy, or bourbon (optional)

Instructions
- In a large mixing bowl, whisk together the egg yolk and sweetener until creamy.
- Heat the heavy cream, almond milk, nutmeg, and salt in a saucepan over medium heat, bringing it to a gentle simmer while whisking frequently.
- Slowly temper the cream mixture into the egg and sweetener, then pour the combined mixture back into the saucepan.
