Ingredients

  • 3-4 mint leaves
  • 3 tbsp water
  • 1 tbsp swerve sweetener
  • 1 lime
  • 1 tbsp unsweetened coconut flakes
  • 1 oz vodka
  • 4 oz coconut sparkling water

Instructions

  1. In a saucepan, bring water, swerve sweetener, and coconut flakes to a boil, then remove from heat.
  2. Juice half of the lime into a glass and save the remaining half for garnish.
  3. Add mint leaves to the glass.
  4. Pour the homemade simple syrup into the glass and muddle.
  5. Add ice, vodka, and sparkling water, then stir.
  6. Garnish with a slice of fresh lime.
