Ingredients

  • 6 large egg yolks
  • 1/2 cup sugar
  • 1 cup whole milk
  • 1 cup heavy cream
  • 1/2 vanilla bean, split lengthwise and seeds scraped out
  • 1 ounce Baileys Irish Cream
  • 1 ounce Irish whiskey
  • Dash of chocolate bitters
  • 2 ounces Guinness stout

Instructions

  1. In a large bowl, whisk together the egg yolks and sugar until pale.
  2. In a small saucepan, bring the whole milk, heavy cream, and vanilla pod with seeds to a simmer.
  3. Slowly pour the hot liquid into the egg mixture while whisking continuously.
  4. Strain the mixture through a fine-mesh sieve into a clean bowl, then place the bowl in a larger bowl of ice water.
  5. Add the Baileys Irish Cream and Irish whiskey to the mixture and stir until cool.
  6. Transfer the mixture to the refrigerator and chill for at least 3 hours.
  7. Freeze the chilled mixture in an ice cream maker according to the manufacturer's directions.
  8. For each float, scoop the ice cream into a glass.
  9. Add a dash of chocolate bitters and top with Guinness stout.
