Ingredients
- 6 large egg yolks
- 1/2 cup sugar
- 1 cup whole milk
- 1 cup heavy cream
- 1/2 vanilla bean, split lengthwise and seeds scraped out
- 1 ounce Baileys Irish Cream
- 1 ounce Irish whiskey
- Dash of chocolate bitters
- 2 ounces Guinness stout
Instructions
- In a large bowl, whisk together the egg yolks and sugar until pale.
- In a small saucepan, bring the whole milk, heavy cream, and vanilla pod with seeds to a simmer.
- Slowly pour the hot liquid into the egg mixture while whisking continuously.
- Strain the mixture through a fine-mesh sieve into a clean bowl, then place the bowl in a larger bowl of ice water.
- Add the Baileys Irish Cream and Irish whiskey to the mixture and stir until cool.
- Transfer the mixture to the refrigerator and chill for at least 3 hours.
- Freeze the chilled mixture in an ice cream maker according to the manufacturer's directions.
- For each float, scoop the ice cream into a glass.
- Add a dash of chocolate bitters and top with Guinness stout.
