Ingredients
- 1 egg yolk
- 1 tablespoon plus 2 teaspoons sugar
- 1/3 cup whole milk
- 2 tablespoons heavy cream
- 1/4 teaspoon fresh nutmeg
- 1 egg white
- Bourbon or brandy (optional)
Instructions
- Separate the yolk from the egg white and place the yolk in a mixing bowl.
- Whisk the egg yolk until it becomes light in color, then add 1 tablespoon of sugar and continue to mix.
- In a saucepan, combine the milk, cream, and nutmeg, and heat the mixture on medium heat until it reaches just below boiling temperature.
- Temper the egg yolk by slowly adding a cup of the hot liquid into the yolks while continuously mixing.
- Once the hot liquid is mixed with the yolks, slowly pour the mixture back into the saucepan and continue heating until it reaches 160 degrees.
- Add bourbon or brandy if desired, then refrigerate the mixture to chill.
- Whisk the egg white until it holds stiff peaks, adding 2 teaspoons of sugar to help stiffen them.
- Gently fold the egg whites into the yolk base.
- Serve the chilled eggnog with a sprinkle of cinnamon.
