- 1 egg yolk
- 3 tablespoons sugar
- 1/3 cup whole milk
- 2 tablespoons heavy cream
- 1/4 teaspoon fresh nutmeg
- 1 egg white
- Bourbon or brandy (optional)
Instructions
- Separate the egg yolk and white.
- Whisk the egg yolk with sugar until light in color.
- In a saucepan, heat the milk, cream, and nutmeg until just below boiling temperature.
- Slowly drizzle a cup of the hot liquid into the egg yolk while mixing to temper the yolks.
- Add the tempered yolks back to the saucepan and heat until it reaches 160 degrees.
- Add bourbon or brandy if desired and chill the mixture in the fridge.
