Ingredients

  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1 cup whole milk
  • 1 cinnamon stick
  • 2 whole cloves
  • 1/3 cup half & half
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon rum extract
  • a pinch of ground nutmeg (plus additional for serving)

Instructions

  1. In a large mixing bowl with a pouring spout, whisk together the egg yolk and sugar until the mixture becomes light in color.
  2. In a medium saucepan over medium heat, heat the milk with the cinnamon stick and whole cloves until it reaches a gentle boil.
  3. Slowly whisk 1/2 cup of the hot milk mixture into the egg mixture to temper the eggs. Repeat this process until about half of the hot milk has been added.
  4. Whisk the tempered egg mixture back into the saucepan and cook over medium heat for 3 minutes, ensuring to whisk constantly.
  5. Strain the mixture from the saucepan into a glass jug, removing the cinnamon stick and whole cloves.
  6. Allow the mixture to cool for about an hour, then stir in the half & half, vanilla extract, rum extract, and nutmeg.
  7. Chill the eggnog in the refrigerator and serve in glasses, topped with a sprinkle of nutmeg.
