Ingredients

  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1 cup whole milk
  • 1 cinnamon stick
  • 2 whole cloves
  • 1/3 cup half & half
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon rum extract
  • a pinch of ground nutmeg

Instructions

  1. In a large mixing bowl with a pouring spout, whisk together the egg yolk and the sugar until the mixture becomes light in color.
  2. In a medium saucepan over medium heat, heat the milk with the cinnamon stick and whole cloves until it is just about to boil.
  3. Slowly whisk about 1/2 cup of the hot milk mixture into the egg mixture to temper the eggs. Continue this process until about half of the milk has been added to the egg mixture.
  4. Whisk the tempered egg mixture back into the saucepan and cook over medium heat for 3 minutes, whisking constantly.
  5. Strain the mixture from the saucepan into a glass jug, removing the cinnamon stick and whole cloves.
  6. Allow the mixture to cool for about an hour, then stir in the half & half, vanilla extract, rum extract, and nutmeg.
  7. Chill the eggnog in the refrigerator and serve in a glass with a sprinkle of nutmeg on top.
