Ingredients

  • 1.50 egg yolks
  • 2 tbsp sugar
  • 1 cup whole milk
  • 3/4 cup heavy cream
  • 1/4 tsp fresh ground nutmeg (packed)
  • 1/8 tsp ground cinnamon
  • 1/4 tsp vanilla

Instructions

  1. Whisk the egg yolks in a large bowl until they become light and smooth.
  2. Add the sugar and continue whisking until fluffy and well combined.
  3. In a medium saucepan, heat the milk and cream over medium heat until it just begins to steam.
  4. Slowly pour the hot milk mixture into the egg yolks, whisking continuously until frothy.
  5. Stir in the cinnamon and nutmeg.
  6. Return the mixture to the saucepan and heat over medium heat until it simmers and thickens, coating the back of a spoon without boiling.
  7. Remove from heat and stir in the vanilla.
  8. Strain the mixture into a bowl, cover, and refrigerate until chilled.
