- 1.50 egg yolks
- 2 tbsp sugar
- 1 cup whole milk
- 3/4 cup heavy cream
- 1/4 tsp fresh ground nutmeg (packed)
- 1/8 tsp ground cinnamon
- 1/4 tsp vanilla
Instructions
- Whisk the egg yolks in a large bowl until they become light and smooth.
- Add the sugar and continue whisking until fluffy and well combined.
- In a medium saucepan, heat the milk and cream over medium heat until it just begins to steam.
- Slowly pour the hot milk mixture into the egg yolks, whisking continuously until frothy.
- Stir in the cinnamon and nutmeg.
- Return the mixture to the saucepan and heat over medium heat until it simmers and thickens, coating the back of a spoon without boiling.
- Remove from heat and stir in the vanilla.
