Ingredients
- 2 fresh pasteurized eggs
- 3 tablespoons granulated sugar, divided
- 3/4 cup heavy cream
- 1/2 cup whole milk
- 2 tablespoons bourbon
- 2 tablespoons Frangelico hazelnut liqueur
- Freshly grated nutmeg for garnishing
Instructions
- Carefully separate the egg yolks and whites into separate bowls.
- In a large bowl, whisk together the egg yolks and 1/4 cup of sugar until pale.
- Warm the cream and milk in a saucepan over medium heat until steaming, then slowly whisk about half of the mixture into the egg yolks.
- Pour the egg and cream mixture back into the saucepan and cook over medium heat, stirring frequently, until it coats the back of a spoon or the first bubble pops.
- Strain the mixture into a bowl and cool completely, then whisk in the bourbon and Frangelico. Refrigerate for about 1 hour until chilled.
- In a separate bowl, beat the egg whites with the remaining 2 tablespoons of sugar until soft peaks form, then whisk the egg white mixture into the cooled egg yolk and bourbon mixture.
- Refrigerate until chilled, and just before serving, stir the eggnog and sprinkle with freshly grated nutmeg. Optional: use a kitchen blowtorch to brûlée the tops of the eggnog for added aroma and color before dusting with nutmeg.
