Ingredients

  • 2 fresh pasteurized eggs
  • 3 tablespoons granulated sugar, divided
  • 3/4 cup heavy cream
  • 1/2 cup whole milk
  • 2 tablespoons bourbon
  • 2 tablespoons Frangelico hazelnut liqueur
  • Freshly grated nutmeg for garnishing

Instructions

  1. Carefully separate the egg yolks and whites into separate bowls.
  2. In a large bowl, whisk together the egg yolks and 1/4 cup of sugar until pale.
  3. Warm the cream and milk in a saucepan over medium heat until steaming, then slowly whisk about half of the mixture into the egg yolks.
  4. Pour the egg and cream mixture back into the saucepan and cook over medium heat, stirring frequently, until it coats the back of a spoon or the first bubble pops.
  5. Strain the mixture into a bowl and cool completely, then whisk in the bourbon and Frangelico. Refrigerate for about 1 hour until chilled.
  6. In a separate bowl, beat the egg whites with the remaining 2 tablespoons of sugar until soft peaks form, then whisk the egg white mixture into the cooled egg yolk and bourbon mixture.
  7. Refrigerate until chilled, and just before serving, stir the eggnog and sprinkle with freshly grated nutmeg. Optional: use a kitchen blowtorch to brûlée the tops of the eggnog for added aroma and color before dusting with nutmeg.
