Grilled Watermelon Bourbon Smash
A refreshing and flavorful cocktail made with grilled watermelon puree, mint-infused simple syrup, and bourbon.
Ingredients
- 6-8 fresh mint leaves
- 2 tablespoons white granulated sugar
- 2 tablespoons filtered water
- 1/2 cup seedless watermelon (cut into cubes)
- Crushed ice
- 1.50 fluid ounces bourbon
Instructions
- In a small saucepan, combine the mint, sugar, and water. Heat over medium low heat until the mixture reaches a slight simmer. Turn off the heat and let it steep for 1 hour. Strain the mixture, discarding the mint leaves, and transfer to a small bowl.
- Grill the watermelon wedges over a hot charcoal grill for about 1 minute per side until they develop a dark red color and grill marks. Let them cool slightly, then chop them into cubes and puree in a food processor or blender for about 10 seconds. Strain the watermelon puree and discard the pulp.
- Pack a cocktail glass with crushed ice. Pour the bourbon into the glass, followed by a tablespoon or two of the mint simple syrup, and then top with the watermelon puree. Garnish with fresh mint leaves.
