Ingredients

  • 1/2 cup heavy cream
  • 1 egg
  • 1/4 cup sugar
  • Pinch of kosher salt
  • 1 tbsp dark rum
  • 2 tbsp whiskey
  • 1/4 tsp vanilla extract
  • 1/4 tsp freshly grated nutmeg, plus more for garnish

Instructions

  1. In a saucepan, heat the heavy cream until it begins to simmer, but do not let it boil.
  2. In a large bowl, whisk together the eggs, sugar, and salt.
  3. Slowly pour 1 cup of the warm cream mixture into the egg mixture, whisking constantly.
  4. Pour the egg mixture back into the saucepan and cook, stirring constantly, until it thickens and coats the back of a spatula.
  5. Strain the mixture into a clean bowl and let it cool for 15 minutes, stirring occasionally.
  6. Whisk in the rum, whiskey, vanilla extract, and nutmeg.
  7. Whip the remaining heavy cream until soft peaks form, then gently fold it into the eggnog mixture.
  8. Serve immediately, topped with a sprinkle of nutmeg. Store in the fridge for up to 3 days and whisk gently before serving.
