Ingredients
- 1/2 cup heavy cream
- 1 egg
- 1/4 cup sugar
- Pinch of kosher salt
- 1 tbsp dark rum
- 2 tbsp whiskey
- 1/4 tsp vanilla extract
- 1/4 tsp freshly grated nutmeg, plus more for garnish
Instructions
- In a saucepan, heat the heavy cream until it begins to simmer, but do not let it boil.
- In a large bowl, whisk together the eggs, sugar, and salt.
- Slowly pour 1 cup of the warm cream mixture into the egg mixture, whisking constantly.
- Pour the egg mixture back into the saucepan and cook, stirring constantly, until it thickens and coats the back of a spatula.
- Strain the mixture into a clean bowl and let it cool for 15 minutes, stirring occasionally.
- Whisk in the rum, whiskey, vanilla extract, and nutmeg.
- Whip the remaining heavy cream until soft peaks form, then gently fold it into the eggnog mixture.
- Serve immediately, topped with a sprinkle of nutmeg. Store in the fridge for up to 3 days and whisk gently before serving.
