Golden Sage Sparkler
A refreshing summer cocktail that blends golden plum, sage, pisco, and dry sparkling wine into a delightful and unique libation.
Ingredients
- 1 1/2 oz pisco
- 1 oz dry sparkling wine
- 3/4 oz honey syrup (2 parts honey to 1 part water)
- 1/2 oz lemon juice
- Small pinch of salt
- 1 dash peach bitters (optional)
- 1/2 golden plum (Mirabelle plum), cut into quarters
- 5 sage leaves (2 for garnish)
Instructions
- Place three sage leaves in the bottom of a shaker and add honey syrup. Gently muddle the sage to release its oil.
- Add the quartered plum to the shaker and crush it to extract the plum juice.
- Add the pisco, lemon juice, pinch of salt, and peach bitters (if using) to the shaker.
- Pour the dry sparkling wine into a glass.
- Fill the shaker with ice, shake for 10 seconds, and double strain the mixture into the glass over the sparkling wine.
- Garnish with sage leaves and enjoy!
