Golden Plum Sage Sparkle
A delightful summer cocktail featuring pisco, golden plum, sage, honey, and sparkling wine for a refreshing and balanced flavor.
Ingredients
- 1 1/2 oz pisco
- 1 oz dry sparkling wine
- 3/4 oz honey syrup (2 parts honey to 1 part water)
- 1/2 oz lemon juice
- Small pinch of salt
- 1 dash peach bitters (optional)
- 1/2 golden plum (also known as Mirabelle plum)
- 5 leaves sage (2 for garnish)
Instructions
- Add three sage leaves to the bottom of your shaker and pour in the honey syrup. Gently muddle the sage to release its oil into the mixture.
- Quarter the half plum and add it to the shaker with the sage-honey syrup. Crush the fruit to extract as much plum juice as possible.
- Add the pisco, lemon juice, salt, and peach bitters (if using) to the shaker.
- Pour the dry sparkling wine into your glass before shaking the cocktail. Use a Cava Brut for a balanced sweetness.
- Fill the shaker with ice, shake for 10 seconds until icy-cold, then double strain the mixture into a coupe glass over the sparkling wine.
- Garnish with a few small pieces of sage and enjoy!
