Ingredients

  • 2 thin slices of peeled fresh ginger (about 1/8 ounce)
  • 10 mint leaves, plus extra mint sprigs for garnish
  • 1 teaspoon maple syrup
  • 2 ounces aged rum
  • Crushed ice

Instructions

  1. In a julep cup or large rocks glass, muddle the fresh ginger until it is well crushed and the juices are expressed.
  2. Add the mint leaves and maple syrup, then muddle until the mint is lightly bruised, swabbing the glass's sides with the aromatic oils of the mint.
  3. Stir in the aged rum.
  4. Half-fill the glass with crushed ice and stir to combine.
  5. Fill the glass completely with crushed ice and stir until the outside of the glass frosts.
  6. Add more crushed ice, heaping generously, then garnish with sprigs of fresh mint.
  7. Serve with a short straw, if desired.
