Ingredients

  • 1/4 Lemon, juiced
  • 2 1/4 oz Lemon Vodka, plus extra for serving
  • 4 oz Fresh or Frozen Cranberries
  • 1 cup Cranberry Juice
  • 3 tbsp Sugar
  • 1 cup Grapefruit Juice
  • 2 cups Double Cream

Instructions

  1. In a pan, bring the sugar and 2 1/4 oz of water to a boil, stirring until the sugar dissolves. Let it cool.
  2. Blend the cranberry juice and cranberries until smooth, then strain the mixture through a fine sieve into a loaf tin. Stir in 2 tbsp of the sugar syrup and freeze, stirring occasionally until solid (2-3 hours).
  3. Combine 1 cup of water, lemon vodka, 4 1/2 tbsp of the sugar syrup, and lemon juice. Pour into another loaf tin and freeze, stirring occasionally (2-3 hours).
  4. Stir together the grapefruit juice and the remaining syrup. Pour the mixture into a third loaf tin and freeze, stirring periodically with a fork (2-3 hours).
  5. Alternate layering each of the three frozen liquids into four martini glasses. Top with more lemon vodka and stir.
