Ingredients
- 2 lemon peels (about 3 grams total)
- 1/2 teaspoon white sugar
- 1 1/2 oz chilled white rhum agricole
- 1 1/2 oz chilled fresh-squeezed orange juice
- 1 oz chilled fresh-squeezed lemon juice
- 1 teaspoon honey
Instructions
- In a heavy pint glass or small glass pitcher, muddle the lemon peel and sugar until it forms a uniform paste.
- Add the chilled rhum agricole, lemon juice, orange juice, and honey to the glass.
- Using a caralhinho or wooden spoon, spin the mixture between your palms until it becomes frothy and all the ingredients are integrated.
- Adjust the taste by adding more lemon juice or honey as needed, aiming for a slightly sweet, tart, and fragrant flavor.
- Strain the mixture through a sieve into a small stemmed glass or over ice into a tall glass.
