Ingredients
- 1 cup fresh cranberries
- 1 cup sugar
- 1 cup water
- 2 oz light rum
- 1 oz fresh lime juice
- 1 oz cranberry juice
- 6-7 mint leaves
- Seltzer or club soda
Instructions
- Make the cranberry syrup by simmering cranberries, sugar, and water in a saucepan for 10-15 minutes, then strain and allow to cool. Be sure not to press the cranberries through the strainer to avoid clouding the syrup.
- Reserve a spoonful of strained cranberries and save the remaining cranberry sauce for another use.
- In a cocktail shaker, gently muddle the mint leaves, lime juice, and a tablespoon of cranberry sauce.
- Add ice cubes, rum, cranberry juice, and 1 ounce of cranberry syrup to the shaker; shake well until frosty.
- Strain the mixture into a highball glass over ice, top with club soda, and garnish with fresh cranberries and a sprig of mint.
