Ingredients

  • 1 cup fresh cranberries
  • 1 cup sugar
  • 1 cup water
  • 2 oz light rum
  • 1 oz fresh lime juice
  • 1 oz cranberry juice
  • 6-7 mint leaves
  • Seltzer or club soda

Instructions

  1. Make the cranberry syrup by simmering cranberries, sugar, and water in a saucepan for 10-15 minutes, then strain and allow to cool. Be sure not to press the cranberries through the strainer to avoid clouding the syrup.
  2. Reserve a spoonful of strained cranberries and save the remaining cranberry sauce for another use.
  3. In a cocktail shaker, gently muddle the mint leaves, lime juice, and a tablespoon of cranberry sauce.
  4. Add ice cubes, rum, cranberry juice, and 1 ounce of cranberry syrup to the shaker; shake well until frosty.
  5. Strain the mixture into a highball glass over ice, top with club soda, and garnish with fresh cranberries and a sprig of mint.
