Ingredients

  • 1/2 cup pineapple juice
  • 1/4 cup Blue Curacao liquor
  • 1/4 cup light rum
  • 1/4 cup cream of coconut
  • 1.50 cups crushed ice
  • 1 tablespoon sweetened coconut flakes for rimming
  • light corn syrup for rimming

Instructions

  1. Spread a small amount of corn syrup on a plate.
  2. Sprinkle coconut flakes on another plate.
  3. Dip the rim of a glass in the corn syrup, then dip into the coconut flakes. Set aside.
  4. Blend the crushed ice, pineapple juice, Blue Curacao, rum, and cream of coconut until smooth.
  5. Pour the mixture into the prepared glass and serve immediately.
