A tropical and visually stunning cocktail with a delightful blend of pineapple juice, Blue Curacao, rum, and cream of coconut, served in a coconut-rimmed glass.
Ingredients
- 1/2 cup pineapple juice
- 1/4 cup Blue Curacao liquor
- 1/4 cup light rum
- 1/4 cup cream of coconut
- 1.50 cups crushed ice
- 1 tablespoon sweetened coconut flakes for rimming
- light corn syrup for rimming
Instructions
- Spread a small amount of corn syrup on a plate.
- Sprinkle coconut flakes on another plate.
- Dip the rim of a glass in the corn syrup, then dip into the coconut flakes. Set aside.
- Blend the crushed ice, pineapple juice, Blue Curacao, rum, and cream of coconut until smooth.
- Pour the mixture into the prepared glass and serve immediately.
