A tropical blue-hued cocktail with pineapple juice, Blue Curacao liquor, rum, and cream of coconut, garnished with coconut flakes for a touch of sweetness and a hint of the tropics.
Ingredients
- 1/2 cup pineapple juice
- 1/4 cup Blue Curacao liquor
- 1/4 cup light rum
- 1/4 cup cream of coconut
- 1 1/2 cups crushed ice
- 2 tablespoons sweetened coconut flakes for rimming
- light corn syrup for rimming
Instructions
- Pour a small amount of corn syrup on a plate.
- Sprinkle coconut flakes on another plate.
- Dip the rim of your glass in the corn syrup and then in the coconut flakes. Set aside.
- In a blender, combine crushed ice, pineapple juice, Blue Curacao, rum, and cream of coconut. Blend until smooth.
- Pour the mixture into the prepared glasses.
