Ingredients

  • 1/2 cup pineapple juice
  • 1/4 cup Blue Curacao liquor
  • 1/4 cup light rum
  • 1/4 cup cream of coconut
  • 1 1/2 cups crushed ice
  • 2 tablespoons sweetened coconut flakes for rimming
  • light corn syrup for rimming

Instructions

  1. Pour a small amount of corn syrup on a plate.
  2. Sprinkle coconut flakes on another plate.
  3. Dip the rim of your glass in the corn syrup and then in the coconut flakes. Set aside.
  4. In a blender, combine crushed ice, pineapple juice, Blue Curacao, rum, and cream of coconut. Blend until smooth.
  5. Pour the mixture into the prepared glasses.
  6. Serve right away and enjoy!
