Ingredients

  • 2 oz blended Scotch
  • 3/4 oz fresh-squeezed lemon juice
  • 3/4 oz honey ginger syrup (or honey syrup)
  • 3 slices fresh ginger
  • Ice
  • 1/4 oz Islay Scotch
  • Candied ginger
  • Lemon peel

Instructions

  1. In a cocktail shaker filled with ice, combine blended Scotch, lemon juice, and honey ginger syrup. Shake thoroughly until well mixed and chilled.
  2. Strain the mixture into a rocks glass filled with ice.
  3. Slowly pour Islay Scotch over the back of a spoon onto the cocktail to float it on top.
  4. Garnish with candied ginger and a lemon peel or wedge.
