Ingredients

  • 1 large egg yolk
  • 2 tablespoons granulated sugar
  • 1 cup whole milk
  • 1 cinnamon stick
  • 2 whole cloves
  • 1/3 cup half & half
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon rum extract
  • a pinch of ground nutmeg (plus more for serving)

Instructions

  1. In a large mixing bowl with a pouring spout, whisk together the egg yolk and sugar until the mixture becomes light in color.
  2. In a medium saucepan over medium heat, heat the milk along with the cinnamon stick and whole cloves until it is barely boiling.
  3. Slowly whisk 1/2 cup of the hot milk mixture into the egg mixture to temper the eggs. Continue whisking 1/2 cupsful of the hot milk into the egg mixture until about half of the milk has been added.
  4. Whisk the tempered egg mixture back into the saucepan and cook over medium heat for 3 minutes, whisking constantly.
  5. Strain the mixture from the saucepan into a glass jug, removing the cinnamon stick and whole cloves.
  6. Allow the mixture to cool for about an hour, and then stir in the half & half cream, vanilla extract, rum extract, and nutmeg.
  7. Chill the eggnog in the refrigerator and serve in glasses with a sprinkle of nutmeg on top.
