Ingredients

  • 3 oz. bourbon
  • 1.50 oz. sweet vermouth
  • 2 dashes bitters
  • 1-2 tsp. homemade pomegranate syrup
  • pomegranate seeds (for garnish, optional)
  • 2 cups pomegranate juice
  • 1/4 cup sugar
  • 1 Tbsp. lemon juice

Instructions

  1. In a small saucepan, combine pomegranate juice, sugar, and lemon juice.
  2. Bring the mixture to a boil, stirring to dissolve the sugar.
  3. Reduce the heat and simmer for one hour, stirring occasionally, until the mixture coats the back of a wooden spoon.
  4. Remove from heat and allow to cool to room temperature. It will continue to thicken as it cools.
  5. In a rocks glass, combine bourbon, sweet vermouth, bitters, and pomegranate syrup. Stir gently until the syrup is dissolved.
  6. Add ice to the glass and garnish with pomegranate seeds.
