Ingredients

  • 1 large egg
  • 3 tablespoons caster sugar
  • 1 1/2 cups whole milk
  • 1/4 ounce dark rum
  • 1/4 ounce brandy
  • 1/2 cup heavy cream
  • Ground nutmeg, for garnish

Instructions

  1. In a saucepan over medium-low heat, combine the egg, sugar, and milk. Whisk the mixture until well combined.
  2. Cook the mixture, stirring constantly, for 6 to 8 minutes or until it thickens and coats the back of a spoon.
  3. Remove the saucepan from the heat and stir in the rum, brandy, and half of the heavy cream.
  4. In a separate bowl, use an electric mixer to beat the remaining heavy cream until soft peaks form.
  5. Pour the egg mixture into a heatproof glass, top with the whipped cream, and sprinkle with nutmeg.
