Ingredients

  • 1 large egg
  • 3 tablespoons caster sugar
  • 1 1/2 cups whole milk
  • 1/4 oz dark rum
  • 1/4 oz brandy
  • 1/2 cup heavy cream
  • Ground nutmeg, for garnish

Instructions

  1. In a saucepan over medium-low heat, combine the egg, sugar, and milk. Whisk constantly until the mixture thickens and coats the back of a spoon (approximately 6-8 minutes).
  2. Remove from heat and stir in the rum, brandy, and half of the cream.
  3. In a separate bowl, use an electric mixer to beat the remaining cream until soft peaks form.
  4. Pour the egg mixture into a heatproof glass.
  5. Top with the whipped cream.
  6. Sprinkle with ground nutmeg before serving.
