Ingredients
- 1.50 large egg yolks
- 2 tbsp sugar
- 1/2 cup heavy whipping cream
- 1 cup milk
- 1/4 tsp nutmeg (ground)
- pinch of cinnamon
- pinch of salt
- 1/2 tsp vanilla extract
- ground cinnamon for topping
Instructions
- In a medium saucepan, heat milk, heavy cream, nutmeg, and cinnamon until almost boiling, whisking frequently.
- In a large bowl, whisk together egg yolks and sugar, gradually adding the sugar while whisking thoroughly.
- Slowly add the hot cream mixture to the egg yolk mixture, whisking thoroughly with each addition.
- Pour the combined mixture back into the saucepan and cook over medium heat until it reaches 160 degrees F, whisking constantly.
- Remove from heat, whisk in the vanilla, and pour into glasses, dusting the top with cinnamon.
