Ingredients

  • 1.50 large egg yolks
  • 2 tbsp sugar
  • 1/2 cup heavy whipping cream
  • 1 cup milk
  • 1/4 tsp nutmeg (ground)
  • pinch of cinnamon
  • pinch of salt
  • 1/2 tsp vanilla extract
  • ground cinnamon for topping

Instructions

  1. In a medium saucepan, heat milk, heavy cream, nutmeg, and cinnamon until almost boiling, whisking frequently.
  2. In a large bowl, whisk together egg yolks and sugar, gradually adding the sugar while whisking thoroughly.
  3. Slowly add the hot cream mixture to the egg yolk mixture, whisking thoroughly with each addition.
  4. Pour the combined mixture back into the saucepan and cook over medium heat until it reaches 160 degrees F, whisking constantly.
  5. Remove from heat, whisk in the vanilla, and pour into glasses, dusting the top with cinnamon.
