Ingredients

  • 2 cups milk
  • 5 whole cloves
  • 1-2 cinnamon sticks
  • 1 teaspoon vanilla extract
  • 6 egg yolks
  • 3/4 cup sugar
  • 2 cups half and half
  • 1 cup brandy
  • 1/2 teaspoon fresh ground nutmeg
  • Whipped cream
  • Fresh ground nutmeg
  • Cinnamon

Instructions

  1. In a medium saucepan, combine milk, cloves, cinnamon sticks, and vanilla. Heat on low for about 5 minutes, then gradually bring to a boil over medium heat. Remove from heat promptly to avoid scalding.
  2. In a medium bowl, whisk together the egg yolks and sugar.
  3. Gradually ladle the hot milk mixture into the egg yolk mixture, whisking with each ladle of milk. Return this mixture (including cloves and cinnamon) back to the saucepan. Cook over medium heat for about 3 minutes, continually whisking until the mixture thickens.
  4. Strain the mixture through a fine-mesh sieve to remove the cloves and cinnamon stick. Refrigerate for 1 hour.
  5. Stir in the half and half, brandy, and additional nutmeg. Chill for 4-8 hours or overnight.
  6. Serve with a dollop of whipped cream and a sprinkle of nutmeg and cinnamon, if desired.
