Ingredients

  • 6 to 7 lemons
  • 1/2 cup granulated sugar
  • 1 cup vodka
  • 1/2 cup water

Instructions

  1. Use a vegetable peeler to carefully remove strips of lemon zest, ensuring to only peel the outermost, yellow part of the rind.
  2. If the lemon strips have white pith on the backside, use a sharp knife to shave it away, and discard it.
  3. Combine the lemon peels with the sugar in a bowl and gently crush them together until the rinds have been bruised and well coated with sugar. Let it stand for at least 1 hour.
  4. After an hour, the sugar should have extracted the oil from the rinds, creating the oleo saccharum.
  5. Set the sous vide circulator to 135 F/57 C.
  6. Combine the oleo saccharum and vodka in a quart-sized vacuum-sealer bag or a quart-sized Mason jar, removing as much air as possible, and seal the bag.
  7. Immerse the bag in the water bath with the circulator for 2 hours.
  8. Transfer the bag to an ice water bath to cool.
  9. Remove the lemon peels and pour the infused vodka into a bottle.
  10. Stir in the water, and store in the refrigerator.
