Ingredients
- 6 to 7 lemons
- 1/2 cup granulated sugar
- 1 cup vodka
- 1/2 cup water
Instructions
- Use a vegetable peeler to carefully remove strips of lemon zest, ensuring to only peel the outermost, yellow part of the rind.
- If the lemon strips have white pith on the backside, use a sharp knife to shave it away, and discard it.
- Combine the lemon peels with the sugar in a bowl and gently crush them together until the rinds have been bruised and well coated with sugar. Let it stand for at least 1 hour.
- After an hour, the sugar should have extracted the oil from the rinds, creating the oleo saccharum.
- Set the sous vide circulator to 135 F/57 C.
- Combine the oleo saccharum and vodka in a quart-sized vacuum-sealer bag or a quart-sized Mason jar, removing as much air as possible, and seal the bag.
- Immerse the bag in the water bath with the circulator for 2 hours.
- Transfer the bag to an ice water bath to cool.
- Remove the lemon peels and pour the infused vodka into a bottle.
- Stir in the water, and store in the refrigerator.
