Ingredients

  • 2 oz Irish whiskey
  • 1 teaspoon ground espresso
  • 2 teaspoons demerara sugar
  • 3 oz cold brew coffee
  • Whipped cream (for serving)

Instructions

  1. In a small bowl, combine the Irish whiskey and espresso, then let it stand for 15 minutes.
  2. Strain the whiskey-espresso mixture through a coffee filter into a cocktail shaker.
  3. In another small bowl, stir the demerara sugar with 2 teaspoons of hot water until the sugar dissolves.
  4. Add the demerara syrup and cold brew coffee to the cocktail shaker, then fill it with ice.
  5. Shake the mixture until the outside of the shaker becomes frosty, which should take about 30 seconds.
  6. Strain the cocktail into a Collins glass filled with ice, and top it off with a generous dollop of whipped cream.
