Edith's Lavender Gin Fizz
A refreshing and visually stunning cocktail that combines lavender-infused gin, Edith Grey simple syrup, lemon juice, and sparkling wine, garnished with dried lavender buds and a stripe of agave syrup.
Ingredients
- 2 oz. gin (Sipsmith VJOP London Dry Gin or gin of choice)
- 1/2 oz. Edith Grey simple syrup (recipe below)
- 3/4 oz. lemon juice
- 1 lavender-infused egg white
- Schramsberg Blanc de Blanc (sparkling wine)
- Garnish: agave syrup, Edith Grey hot tea
Instructions
- Place the whole egg in a sealed container on a thick bed of lavender buds, refrigerate for two to three days.
- Brew Edith Grey tea according to the package instructions, then combine with equal parts sugar while hot. Stir until clear and let cool to make the Edith Grey simple syrup.
- Once the egg and syrup are ready, combine all ingredients except the sparkling wine in a shaker.
- Dry shake the ingredients, then add ice and continue shaking for at least thirty seconds.
- Strain the mixture into a glass and top with the sparkling wine.
- Garnish the glass with a stripe of agave syrup and a sprinkle of Edith Grey tea.
