A refreshing and visually stunning cocktail that combines lavender-infused gin, Edith Grey simple syrup, lemon juice, and sparkling wine, garnished with dried lavender buds and a stripe of agave syrup.

Ingredients

  • 2 oz. gin (Sipsmith VJOP London Dry Gin or gin of choice)
  • 1/2 oz. Edith Grey simple syrup (recipe below)
  • 3/4 oz. lemon juice
  • 1 lavender-infused egg white
  • Schramsberg Blanc de Blanc (sparkling wine)
  • Garnish: agave syrup, Edith Grey hot tea

Instructions

  1. Place the whole egg in a sealed container on a thick bed of lavender buds, refrigerate for two to three days.
  2. Brew Edith Grey tea according to the package instructions, then combine with equal parts sugar while hot. Stir until clear and let cool to make the Edith Grey simple syrup.
  3. Once the egg and syrup are ready, combine all ingredients except the sparkling wine in a shaker.
  4. Dry shake the ingredients, then add ice and continue shaking for at least thirty seconds.
  5. Strain the mixture into a glass and top with the sparkling wine.
  6. Garnish the glass with a stripe of agave syrup and a sprinkle of Edith Grey tea.
