Ingredients

  • 1/4 cup dandelion greens, thinly sliced
  • 1-2 tbsp agave syrup, to taste
  • 1/4 cup water
  • Juice of 1 lime
  • 6 oz seltzer water
  • 1 oz white rum (optional)
  • Ice

Instructions

  1. If desired, blanch dandelion greens in boiling water for 30-45 seconds, then transfer to ice water to stop the cooking process and dry them.
  2. Remove the stems and roughly chop the dandelion greens.
  3. In a small saucepan, simmer agave and water to create a syrup, then let it cool to room temperature.
  4. Blend the dandelion greens and agave syrup until smooth using an immersion blender or food processor.
  5. Strain the puree through a fine mesh sieve into a bowl, pressing out the liquid with a spoon.
  6. Juice the lime into a pitcher and add the lime rinds for extra flavor.
  7. Pour the dandelion puree and seltzer water over the limes in the pitcher, adjusting sweetness and tartness to taste with additional lime juice or agave.
  8. Add white rum directly to the pitcher, if using, or keep it separate for individual preferences.
  9. Serve over ice and garnish with a lime wedge.
