Ingredients
- 1/2 cup white rum
- 1 cup sweetened condensed milk
- 1 1/4 cup evaporated milk
- 1/2 cup coconut milk
- A few drops of vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg, freshly grated
- Zest of half a lime
Instructions
- In a large bowl, mix the coconut milk and rum, then cover and let it sit at room temperature for 2 hours.
- In a heavy-bottomed saucepan, combine the evaporated milk, cinnamon, nutmeg, and lime zest. Infuse over low heat for 20 minutes without boiling.
- Remove the pan from the heat, stir in the rum-infused coconut milk, vanilla extract, and pour in the sweetened condensed milk while whisking continuously.
- Allow the mixture to rest for at least 4 hours in a cool, dark place to blend the flavors.
- Strain through a fine sieve and serve very chilled, with or without crushed ice.
