Ingredients

  • 5 egg yolks
  • 1 cup milk
  • 1/4 cup heavy whipping cream
  • 1/4 cup granulated sugar (or brown sugar!)
  • 1 small cinnamon stick
  • 1/4 tsp. nutmeg
  • 1 tsp. vanilla

Instructions

  1. In a small saucepan, mix the milk, cinnamon stick, nutmeg, and sugar over medium heat until the sugar dissolves and the mixture is hot but not boiling.
  2. In a large mixing bowl, whisk the egg yolks until pale and fluffy.
  3. Slowly pour the hot milk mixture into the whisked egg yolks, stirring constantly to avoid scrambling the eggs.
  4. Carefully pour the mixture back into the pan and heat over medium-low, stirring occasionally for about 20 minutes, until hot but not boiling.
  5. Strain the mixture through a fine mesh, stir in the heavy cream and vanilla.
  6. Cool the eggnog to room temperature, then cover and chill until cold.
