- 5 egg yolks
- 1 cup milk
- 1/4 cup heavy whipping cream
- 1/4 cup granulated sugar (or brown sugar!)
- 1 small cinnamon stick
- 1/4 tsp. nutmeg
- 1 tsp. vanilla
Instructions
- In a small saucepan, mix the milk, cinnamon stick, nutmeg, and sugar over medium heat until the sugar dissolves and the mixture is hot but not boiling.
- In a large mixing bowl, whisk the egg yolks until pale and fluffy.
- Slowly pour the hot milk mixture into the whisked egg yolks, stirring constantly to avoid scrambling the eggs.
- Carefully pour the mixture back into the pan and heat over medium-low, stirring occasionally for about 20 minutes, until hot but not boiling.
