Ingredients

  • 1/2 cup sugar
  • 1/2 cup cranberry, pomegranate, or cherry juice
  • 3 sprigs rosemary
  • 1 oz ruby-red simple syrup
  • 1 oz lemon juice
  • 1 oz gin (St George's Terroir Gin recommended)
  • 2-3 oz champagne
  • Rosemary sprigs and pomegranate seeds for garnish

Instructions

  1. In a pot, bring sugar, juice, and rosemary to a boil, then simmer for a few minutes and let it cool to infuse the rosemary.
  2. Strain the syrup and chill it in the fridge. It can be stored for a couple of weeks.
  3. Pour 1 oz of the simple syrup into a champagne flute.
  4. In a cocktail shaker, combine gin and lemon juice, add ice, and shake well.
  5. Strain the gin and lemon mixture into the flute.
  6. Top up the flute with 2-3 oz of champagne.
  7. Garnish with a rosemary skewer and a cranberry, cherry, or pomegranate aril.
