Ingredients
- 2 large egg yolks
- 2 tablespoons granulated sugar
- 1/2 cup heavy cream
- 1 cup milk
- 3/4 teaspoon freshly grated nutmeg
- Pinch of salt
- 1/8 teaspoon vanilla extract
- A few drops of rum extract (optional)
Instructions
- In a medium bowl, whisk together the egg yolks and sugar until creamy.
- In a saucepan, heat the cream, milk, nutmeg, and salt until just simmering, stirring regularly.
- Gradually add a small amount of the hot milk mixture to the egg mixture, whisking vigorously to avoid curdling.
- Continue gradually adding the hot milk mixture to the eggs and whisk thoroughly.
- Pour the tempered egg mixture back into the saucepan and cook, stirring constantly, until it reaches 160 degrees F on a thermometer.
- Remove from the heat and stir in the vanilla and rum extract (if using).
- Transfer the eggnog to a bowl, cover with plastic wrap, and refrigerate until thoroughly chilled.
