Ingredients

  • 1 1/2 tbsp balsamic vinegar
  • 1 1/2 tbsp coarsely ground espresso coffee
  • 1 1/2 tbsp agave syrup
  • 1 1/2 tbsp maple syrup
  • 4 oz chilled sparkling water
  • Ice

Instructions

  1. In a medium bowl, combine balsamic vinegar, coarsely ground espresso coffee, and 1/2 cup of water. Cover with plastic wrap and let it sit at room temperature for at least 6 hours or overnight.
  2. Pour the liquid through a fine sieve lined with cheesecloth into another bowl.
  3. Stir in the agave and maple syrups.
  4. Store the coffee shrub in an airtight glass container in the refrigerator for up to 4 weeks.
  5. To serve, in a chilled 12-oz. glass filled with ice, add 1 1/2 tablespoons of the coffee shrub.
  6. Top with 4 ounces of sparkling water and stir to combine.
