Ingredients

  • 1/2 cup coconut milk
  • 1/2 cup sweetened condensed milk
  • 2 to 4 tablespoons cream of coconut
  • 1 1/2 oz rum
  • 2 tablespoons evaporated milk
  • 1/4 teaspoon vanilla extract
  • 1/8 teaspoon ground cinnamon
  • pinch of freshly ground nutmeg
  • cinnamon stick for garnish

Instructions

  1. In a blender, combine the coconut milk, sweetened condensed milk, cream of coconut, rum, evaporated milk, vanilla extract, ground cinnamon, and nutmeg.
  2. Blend on low speed until well combined, for about 1 minute.
  3. Transfer the mixture to a pitcher or jar and refrigerate for at least 6 hours.
  4. For the best flavor, let the Coconut Rum Delight chill for at least 4 hours or up to 4 days.
  5. Shake before serving and pour into a glass.
