Ingredients

  • 1/2 cup full-fat canned coconut milk
  • 1 egg yolk
  • 1 tablespoon maple syrup
  • 1/4 teaspoon grated nutmeg
  • 1/8 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • 1/2 - 1 tablespoon bourbon (optional)

Instructions

  1. In a blender, blend the egg yolk and maple syrup until light and fluffy.
  2. In a saucepan, heat the coconut milk, nutmeg, and cinnamon until simmering, whisking often.
  3. Slowly pour the hot coconut milk into the egg mixture while blending or mixing with a hand-held mixer.
  4. Transfer the mixture back to the saucepan through a fine-mesh strainer and heat until thick, stirring constantly.
  5. Once thickened, remove from heat, stir in the vanilla extract and bourbon if using.
  6. Allow the eggnog to cool to room temperature, then refrigerate until chilled.
