Ingredients
- 2/3 cup coconut milk
- 2 tablespoons granulated sugar
- 1/8 teaspoon vanilla extract
- 1 large egg yolk
- 1/8 teaspoon ground cinnamon
- Pinch of ground nutmeg
- 1 tablespoon hazelnut liqueur
- 1 egg white (optional)
- 1 teaspoon sweetened flaked coconut (for garnish, optional)
- 1/2 teaspoon cinnamon sugar (for garnish, optional)
Instructions
- Set aside an ice bath for later use.
- In a medium saucepan, heat the coconut milk, 1 tablespoon of the sugar, and vanilla over medium low heat until the sugar is dissolved and the milk begins to steam.
- In a separate bowl, whisk the remaining sugar into the egg yolk until the mixture becomes paler in color and smooth in texture.
- Slowly pour a small amount of the warm coconut milk into the egg yolk mixture while whisking continuously, then transfer the egg yolk mixture into the saucepan with the remaining coconut milk.
- Add the cinnamon and nutmeg to the saucepan and stir constantly over medium low heat until the mixture thickens.
- Stir in the hazelnut liqueur and then place the saucepan into the prepared ice bath, stirring as the eggnog cools.
- Refrigerate the eggnog for at least 2 hours or overnight.
- Optional: If using egg whites, beat them with a portion of the sugar until frothy, then gently fold into the cooled eggnog.
- Serve the eggnog garnished with flaked coconut and a sprinkle of cinnamon sugar.
