Ingredients

  • 2/3 cup coconut milk
  • 2 tablespoons granulated sugar
  • 1/8 teaspoon vanilla extract
  • 1 large egg yolk
  • 1/8 teaspoon ground cinnamon
  • Pinch of ground nutmeg
  • 1 tablespoon hazelnut liqueur
  • 1 egg white (optional)
  • 1 teaspoon sweetened flaked coconut (for garnish, optional)
  • 1/2 teaspoon cinnamon sugar (for garnish, optional)

Instructions

  1. Set aside an ice bath for later use.
  2. In a medium saucepan, heat the coconut milk, 1 tablespoon of the sugar, and vanilla over medium low heat until the sugar is dissolved and the milk begins to steam.
  3. In a separate bowl, whisk the remaining sugar into the egg yolk until the mixture becomes paler in color and smooth in texture.
  4. Slowly pour a small amount of the warm coconut milk into the egg yolk mixture while whisking continuously, then transfer the egg yolk mixture into the saucepan with the remaining coconut milk.
  5. Add the cinnamon and nutmeg to the saucepan and stir constantly over medium low heat until the mixture thickens.
  6. Stir in the hazelnut liqueur and then place the saucepan into the prepared ice bath, stirring as the eggnog cools.
  7. Refrigerate the eggnog for at least 2 hours or overnight.
  8. Optional: If using egg whites, beat them with a portion of the sugar until frothy, then gently fold into the cooled eggnog.
  9. Serve the eggnog garnished with flaked coconut and a sprinkle of cinnamon sugar.
