Ingredients

  • 1 yellow nectarine (substitute peach), halved, stone removed
  • 4-5 mint leaves
  • 2 tbsp caster sugar
  • 1/4 tsp citric acid
  • 2 oz rum
  • 1/2 oz orgeat syrup

Instructions

  1. Heat a grill pan over high heat and grill the nectarine halves for about 1 minute on each side until lightly charred, then set aside to cool.
  2. Blanch the mint leaves in boiling water for 10 seconds, then rinse them under cold water.
  3. In a blender, combine the sugar and citric acid with 1 cup of hot water and blend until dissolved. Add the grilled nectarines and blanched mint, then blend until smooth.
  4. Pour the mixture into an ice cube tray and freeze overnight.
  5. In a blender, combine half of the rum, half of the orgeat syrup, and half of the nectarine ice cubes. Blend until smooth, then pour into a glass.
  6. Repeat the blending process with the remaining rum, orgeat syrup, and nectarine ice cubes. Garnish with a mint sprig and serve immediately.
