Chilled Sunset Bliss Cocktail
A delightful and refreshing stone fruit slushie cocktail with charred nectarines, mint, and rum, perfect for warm summer nights.
Ingredients
- 1 yellow nectarine (substitute peach), halved, stone removed
- 4-5 mint leaves
- 2 tbsp caster sugar
- 1/4 tsp citric acid
- 2 oz rum
- 1/2 oz orgeat syrup
Instructions
- Heat a grill pan over high heat and grill the nectarine halves for about 1 minute on each side until lightly charred, then set aside to cool.
- Blanch the mint leaves in boiling water for 10 seconds, then rinse them under cold water.
- In a blender, combine the sugar and citric acid with 1 cup of hot water and blend until dissolved. Add the grilled nectarines and blanched mint, then blend until smooth.
- Pour the mixture into an ice cube tray and freeze overnight.
- In a blender, combine half of the rum, half of the orgeat syrup, and half of the nectarine ice cubes. Blend until smooth, then pour into a glass.
- Repeat the blending process with the remaining rum, orgeat syrup, and nectarine ice cubes. Garnish with a mint sprig and serve immediately.
