Champagne Pomegranate Jelly Surprise

Ingredients

  • 2 fl oz Champagne or sparkling wine
  • 1 tsp granulated sugar
  • 1/4 tsp powdered gelatin
  • 1.50 fl oz pomegranate bursting boba
  • 1 tbsp heavy whipping cream
  • 1/2 tsp white nonpareils
  • Edible gold stars
  • 1 sprig of rosemary

Instructions

  1. In a saucepan, combine the champagne and granulated sugar. Set aside 2 tablespoons of champagne and sprinkle the powdered gelatin over it. Allow the gelatin to set for about 1 minute.
  2. Gently heat the champagne and sugar in the saucepan, stirring constantly until the sugar dissolves, but do not let it boil. Add the bloomed gelatin and stir until melted. Let the mixture cool until barely warm to the touch.
  3. Drain the pomegranate boba and divide them into 1 shot glass. Pour the champagne mixture over the boba and refrigerate until set, for about 2 hours.
  4. In an electric mixer, beat the heavy cream until soft peaks form. Pipe the whipped cream on top of the set jelly and sprinkle with nonpareils and gold stars. Refrigerate until ready to serve.
  5. Just before serving, garnish with a sprig of rosemary.
