Ingredients

  • 1/2 cup Champagne or sparkling wine
  • 1 1/2 tablespoons granulated sugar
  • 1/4 packet (.06 oz.) powdered gelatin
  • 1 tablespoon heavy whipping cream
  • 1 tablespoon pomegranate bursting boba
  • 1 sprig of rosemary

Instructions

  1. In a saucepan, combine the champagne and granulated sugar. In a separate small bowl, sprinkle the powdered gelatin over 2 tablespoons of champagne and let it set for about 1 minute.
  2. Gently heat the champagne and sugar mixture, stirring constantly until the sugar dissolves, being careful not to bring it to a boil. Add the bloomed gelatin and stir until melted. Allow the mixture to cool to room temperature, for about 20-25 minutes.
  3. Drain the pomegranate bursting boba and place them on paper towels. Evenly distribute the boba into a shot glass, then pour the champagne mixture over them. Refrigerate until set, approximately 2 hours.
  4. Beat the heavy cream until it reaches soft peaks, then pipe it onto the set jelly in the shot glasses. Sprinkle with nonpareils and gold stars. Refrigerate until ready to serve.
  5. Just before serving, garnish with a sprig of rosemary.
