Celebratory Fruity Bellinis
My friend Kelsey is tying the knot in just under two weeks, and we're throwing a virtual bridal shower to celebrate her special day! Kelsey is an absolute sweetheart, and I couldn't be happier for her as she begins this new chapter in her life. To add an extra touch of celebration to the occasion, I wanted to create a drink that perfectly captures the joy of this momentous event. After much consideration, I settled on delightful Strawberry and Peach Bellinis. These fruity and bubbly cocktails are the perfect way to toast to love, happiness, and new beginnings.
Celebratory Fruity Bellinis
A delightful and celebratory blend of peach and strawberry purées mixed with Prosecco, creating a refreshing and bubbly cocktail that's perfect for toasting special occasions.
Ingredients
- 2 oz peaches, thawed if frozen (white if possible)
- 1 tbsp simple syrup
- 2 tsp water
- 2 oz strawberries, thawed if frozen
- 1 tbsp simple syrup
- 1 tbsp water
- 4 oz Prosecco, Champagne, or other sparkling wine
- Fresh strawberries and peaches, for garnish
Instructions
- In a blender, blend the peaches until they are broken down.
- Add water and simple syrup to the blender and continue blending until the mixture is smooth.
- Taste the peach purée and add more simple syrup if needed.
- Rinse out the blender, then repeat the process with the strawberries.
- Strain the strawberries through a fine mesh strainer to remove the seeds.
- Store the purées in airtight containers in the refrigerator. They can be made a day in advance.
- To make the bellinis, add 2 tablespoons of fruit purée to the bottom of each champagne flute.
- Slowly pour Prosecco over the fruit and gently stir to combine.
- Garnish with fresh fruit as desired and serve immediately.
