Ingredients
- 1/2 cup white rum
- 1 cup sweetened condensed milk
- 1 1/4 cups evaporated milk
- 1/2 cup coconut milk
- A few drops of vanilla extract
- 1/4 teaspoon ground cinnamon
- 1/4 teaspoon nutmeg (freshly grated)
- Zest of half a lime
Instructions
- In a large bowl, combine the coconut milk and rum, cover, and let steep at room temperature for 2 hours.
- In a large, heavy-bottomed saucepan, combine the evaporated milk, cinnamon, nutmeg, and lime zest. Infuse over low heat for 20 minutes without boiling.
- Remove from heat and stir in the rum-infused coconut milk, then add the vanilla extract. Gradually pour in the sweetened condensed milk while continuously whisking.
- Let the mixture stand for at least 4 hours in a dark, cool place to allow the flavors to blend.
- Filter through a fine sieve and serve very chilled, with or without crushed ice.
