Ingredients

  • 1 1/2 oz. light rum
  • 3/4 oz. fresh lime juice
  • 1/2 oz. Amaro Montenegro
  • 1/2 oz. simple syrup
  • 1 fresh egg white
  • 3 oz. chilled tonic water

Instructions

  1. Combine all ingredients except tonic water in a shaker without ice.
  2. Shake to combine, then add ice and shake vigorously until the mixture is chilled and foamy.
  3. Pour chilled tonic water into a Collins glass.
  4. Strain the cocktail into the glass until the liquid reaches half an inch below the rim.
  5. Allow the foam to settle completely, then finish straining the remainder of the cocktail into the glass.
