Ingredients
- 3.17 oz Caramilk chocolate
- 1/2 cup heavy cream
- 1/2 cup whole milk
- 4 egg yolks
- 1/2 tsp vanilla extract
- 2 tbsp granulated sugar
- 2 tbsp spiced rum
- Ground nutmeg, for garnish
Instructions
- Use a vegetable peeler to shave 1 tbsp of Caramilk chocolate. Finely chop the remaining chocolate.
- In a saucepan over low heat, combine the chopped chocolate, cream, and milk. Stir until the chocolate melts and the mixture just begins to boil. Remove from heat.
- In a large bowl, whisk together the egg yolks, vanilla, and sugar until pale and thickened. Gradually whisk in the hot cream mixture.
- Return the mixture to the saucepan over medium-low heat. Stir constantly for 8-10 minutes until slightly thickened (it should coat the back of a spoon). Avoid boiling. Stir in the rum.
- Divide the mixture into a heatproof serving glass. Top with extra whipped cream and sprinkle with chocolate shavings and nutmeg.
